I didn’t get any mileage in Tuesday and I wanted to take advantage of the nice weather so I set my alarm 20 minutes early and walked 1.4 miles before work. It really is a wonderful way to start my day!
I made a Pineapple Protein Pancake for breakfast that turned out beautifully!
Pineapple Protein Pancake
(Modified from TIU Protein Pancake)
- 2 eggs
- 1 scoop protein powder (Vanilla Progenex works great!)
- 2 tbs vanilla almond milk or skim
- 1 tsp cinnamon
- 1 tbs ground flaxseed
After above ingredients are mixed together add 2 Tbs crushed pineapple
Mix together and cook over low-medium heat. Cook 5 minutes per side.
Top w/ 2 Tbs crushed pineapple and 1 Tbs almond butter.
I reheated Venison Stir-Fry leftovers that had a handful of almonds on top for good measure. I also ate my apple with lunch hoping it would help fill me since I’m changing my routine to avoid a morning snack. An afternoon Larabar held me over until it was time for a run.
I managed to ignore my 6pm hunger and make it out for a 3 mile run with a .25 mile walk back to the house. We had planned breakfast for dinner so I baked sweet potato cubes, heated some venison sausage, and cooked up an egg over-medium. It was a nice change since I seem to always do scrambled these days! I was hoping to use the runny egg juice, but when I flipped it a second time the yolk broke so it ended up on the bottom of the bowl instead of the top. About 30 seconds after I snapped the picture I topped my bowl with ketchup. I enjoyed some crunchy green grapes after dinner. The fruit is helping to cure my desire for an after-dinner snack, while still keeping it fairly healthy.
To end on a positive note: think my entire day was Paleo 🙂
