I love the kitchen! I love to search for recipes, I love to cook, and most importantly, I love to eat! In the weeks leading up to the wedding, my meals got pretty boring. Not only was I trying to eat super clean, but time for meal planning and cooking was at a minimum so we made things with very few ingredients that didn’t require a recipe. Now that the wedding has passed and I’m in summer mode, it’s a perfect time for me to enjoy some of my passions and one of those means getting back into the kitchen.
I wrote a post the other day about my fitness goals, but I’m still developing my nutritional goals. In one sense, I love seeing the gains that have come from following a strict diet, but on the other hand, I think that life is meant to be lived and that means enjoying summer treats like ice cream, corn on the cob (with butter), angel food cake with whipped cream, snowballs with marshmallow, s’mores … you get the picture 🙂 What can I say, I like sweets!
In a perfect world, I’d like to follow a 90/10 diet (90% healthy, 10% treats), but something gray like that can quickly turn into 50/50 for me. I’ve seen this quote in several places and I love it: “Call it whatever you want: Paleo, Primal, Hunter-Gatherer, Pretentious D-Bag Diet; just eat clean. If you’re eating as clean as possible, you don’t even need to worry about the quantity.” Haha! I’d like to eat clean, unless it’s a special occassion. Nightly treats become a habit very quickly and I’d like my food to compliment my dedication to exercise.
With that being said, here are a few highlight meals from this week:
Kale salad with avocado, turkey, cucumber, grapes, tomatoes, and Tessemae’s Lemon Garlic. So easy, but such a great combination!
Grilled Ginger Sesame Chicken Salad
Easy, delicious, and it made great leftovers (add leftover meat or eggs).
Wedding Cake. Well, sorta’. Our wedding cake was all eaten (so they say, but it may have been thrown out) and we didn’t get any, so we bought two slices from the bakery and ate our ‘wedding cake’ during the week. This was chocolate cake with chocolate mousse and American Buttercream frosting.
Crockpot Paleo Meatloaf with the last pack of ground venison. I added red pepper, onion, garlic, and spinach. The picture shows it going in … and coming out 5 hrs later with mashed cauliflower.
I hope this doesn’t sound terrible, but a highlight of getting married is getting lots of new kitchen toys. Here are two of my favorites that I can’t wait to try out in the coming weeks!
I’m not quite sure what to do with the juicer so I will be on the lookout for recipes! Pinterest, here I come!
