Cajun Chicken with *Paleo* Dirty Rice

I’m still on vacation, but wanted to share a recipe from Fitness Magazine (February 2009) that I made Paleo and really enjoyed!

Cajun Chicken with Dirty “Rice” 

1 tsp dried Cajun seasoning
2 chicken breasts
2 tsp coconut oil
2 garlic cloves, minced
1 cup chopped onion
1 green pepper diced
1 red pepper, diced
2 Tbs tomato paste
Siracha, to taste
1 head cauliflower
1 shallot, diced


Use a food processor to grate the cauliflower into rice sized pieces.  I have a mini-food processor so I have to take about 1/5 of the cauliflower at a time.  This honestly takes the most time.  Put 1 Tbs coconut oil in a pan and saute the shallot.  Add the cauliflower with 2 Tbs water (may need more depending on size of cauliflower) and cook over medium heat for 10 minutes until soft.


If you are like me, I try to do most of my cooking outside to keep the house cool in the summer.  I recommend sprinkling the chicken with cajun seasoning and grilling it.  When it’s cooked,  cut it into bite size pieces.

Putting it all together!

In a separate pan, add 1 Tbs coconut oil and saute onion, garlic, peppers, tomato paste, and siracha for 3 minutes.  Add rice and chicken and cook for 3 more minutes.
